omelette with fresh herbs

INGREDIENTS
 
8 eggs
 
A handful of your favorite fresh herbs, chopped (basil, chives, thyme, parsley ...)
 
4 cloves garlic, minced
 
3 tablespoons water
 
Cooking grease
 
Sea salt and freshly ground pepper to taste
 
PREPARATION
 
01. Beat the eggs with the garlic, herbs and water in a bowl, season to taste with sea salt and freshly ground black pepper.
 
02. Heat a nonstick skillet over medium heat, add 1 tablespoon drippings and pour soup. Of the egg mixture into the pan.
 
03. Use a spatula to gently toss the omelette as it cooks to allow uncooked portions to pass underneath.
 
04. When the omelette is cooked, fold the omelette in half, cover and cook for another minute.
 
05. Set aside and repeat steps 2-4 for the remaining omelettes
